Jean-Louis Peste practised medicine at the Hospices de Beaune for more than 30 years in the middle of the 19th Century. His daughter, the Baroness de Baÿ, bequeated a vast domain to the Hôtel-Dieu in 1924, in memory of her father.
Since its foundation during 15th Century by Nicolas Rolin and his wife Guigone de Salins, the Hospital has beenfunded by legacies and gifts ; and became a beautiful vineyard estate.
From 1859, the wines of the Hospices are sold by auction to improve the new hospital and keep the old buidings like « Hôtel-Dieu ».
